In our ESMERALDA line, we will sell exceptional and innovative filter coffees. The line is named after Emerald, the precious gemstone for which Colombia is famous.

In our Esmeralda line, we present delightfully innovative filter coffee and this one is no different. Produced by Juan Pablo Vélez family of Finca La Luisa in Ciudad Bolivar, Antioquia (Co), the “Peach Fruit Honey Process” is an experimental fermentation technique that brings coffee with soft and delicate peach aromas, evoked intensely.

This unique processing method involves a long two-step fermentation process and the use of pressurized stainless steel tanks where coffee cherries are fermented without oxygen for five days (carbonic maceration) and then consequently in the second step, the depulped cherries are returned to fermentation with the leached or coffee juice (recovered from the first step), mixed with peach juice for three days. This brings out complex aromas with bright fruit notes.

This exceptional coffee is best enjoyed in a filter preparation.  For filter preparations, we recommend a preparation with 8 grams per cup of 120 ml, grinding medium to coarse (7-9 Ek grinder), and leaving 3.5 to 4 minutes to extract.
