In our Manifiesto line, we use coffees produced by communities that were victims of the armed conflict.
Unfortunately and very sadly, Santuario, Risaralda is on the list of Colombia human rights update for February 2024 as on on 22 February , the bodies of four men were found in a mass grave in Santuario, Risaralda, which human rights groups registered as the 12th massacre of the year so far. The victims’ families had not heard from them since November.
With the Manifiesto line, we want to keep the memory vivid of so many innocent and unnecessary losses of life in Colombia. At the same time, we want to pay tribute to the resilience of the Colombian people because in the same town and notwithstanding these atrocities, beautiful coffees are produced. With every sip of this coffee, we also say that violence will never prevail and we honor the brave coffee producers of Santuario.
The profile of the Santuario coffee produced by Asocafé Tatama, showcases a balanced cup with sugar cane, almonds and cacao making this lot ideal for a sweet and balanced espresso.
This coffee was wet processed. This means that first the coffee cherries or the outer skin of the coffee beans were removed by means of a machine. Afterwards the bean with its leftover mucilage was fermented for a number of hours in water to ensure that it can be entirely removed.
For espresso, we recommend grinding 18 gr of coffee at a fine espresso setting. Measure 36 - 40 g of brewed liquid in your cup in 24 - 32 seconds.
