About Pacamara: The Pacamara coffee varietal is a creation of the Salvadoran Institute for Coffee Research (ISIC) back in 1958, which resulted from the crossing of Pacas and the Maragogype varietals. The art of this Pacamara lies in achieving a balanced flavor profile. While the fruitiness is the highlight, it is harmoniously balanced with other elements like sweetness, body and a clean finish. This is the mark of Jhonatan ("Tatan") Gasca.
The second place at the World Barista Championship 2024 in Busan, Jack Simpson, used this competition Pacamara for his routine in Busan. Please read about his selection journey and his trip to Bruselas to meet Tatan on Jack's Instagram account @jacksimpson32. It is a fascinating story.
This exceptional coffee is best enjoyed in a filter preparation. For filter preparations, we recommend a preparation with 13 grams per cup of 2000 ml, grinding medium (7 Ek grinder), and leaving 2 to 3 minutes to extract in 4 swirls.
