Meet the Producer

Wilton Benitez is a celebrated coffee innovator from Cauca, Colombia. His dedication to excellence has earned him multiple awards, including the Golden Bean (2022) and Best Cup of Cauca (2023). His expertise in fermentation and meticulous processing methods have made his coffees some of the most sought-after in Colombia.

The fermentation process behind this lot is exceptional:

  1. Sanitization with ultraviolet light and ozone to eliminate microbial activity

  2. Pulped and fermented for 60 hours in a bioreactor for controlled flavor development

  3. Washed and mechanically dried at 38°C for 46 hours to preserve quality and clarity

Brewing Recommendations

For Filter:

Dose: 13g per 200ml of water
Grind: Medium (EK43 Grinder #7)
Brew Time: 2–3 minutes with 4 swirls

For Espresso:

Dose & Yield: Adjust grind size and extraction for a balanced shot
