Meet the Producer

Wilton Benitez is a pioneer in high-precision coffee processing, pushing the boundaries of fermentation and post-harvest innovation. His expertise has earned him multiple accolades, including Golden Bean (2022) and Best Cup of Cauca (2023). His team member, Edwin Tascón, became Colombia’s barista champion in 2024, further showcasing the quality of their coffees.

His experimental approach ensures a coffee that is both intensely sweet and exceptionally clean:

1. Sanitization & First Fermentation

• Cherries are sanitized using ozone

• Whole cherries undergo 48-hour submerged fermentation

2. Pulping & Second Fermentation

• Beans are pulped and fermented for 24 hours with a specific strain of Lactobacillus yeast

• This enhances sweetness and body

3. Thermal Shock & Drying

• Beans are subjected to hot and cold rinses to absorb fermentation metabolites

• This locks in flavors and halts further fermentation

• Final drying is done using a custom Eco-Enigma dehumidifying dryer to prevent over-oxidation
